Rafael Cagali's Hove restaurant earned Brighton and Hove its first Michelin star in roughly fifty years, which gives you a sense of what the south coast was working with before this arrived. Maré is a modern sharing-plates restaurant where the cooking runs from Brazilian to Mediterranean to Japanese without feeling lost, held together by a kitchen that came up through Da Terra. The room is sleek; the service is warm enough that you won't notice the ambition.
