A stone house in medieval Allariz that once held a century-old restaurant now serves contemporary tasting menus named for a river and the Galician word for its murmur, a nod to a Rosalía de Castro poem. The chef, a Madrid native with deep summer roots here, works with small local producers and draws the menu's arc from the gentle and occasionally wild moods of the nearby River Arnoia. Two menus, short or long, with wine pairing available for both.
