Masama
South American Peruvian
The pistachio-green shopfront on place de la Bilange is hard to miss, which is convenient because Masama is easy to love. This small fusion restaurant brings a South American sensibility to the Loire Valley, where the chef weaves Colombian instincts around local mushrooms and asparagus. Lunch runs a compact, very French set menu; dinner opens things up with ceviche and picanha with chimichurri. Saumur's wine crowd has clearly adopted it.
