A Michelin-starred creative Italian restaurant in a small Pontinia town square, where the kitchen takes the Agro Pontino's local ingredients seriously enough to let them argue with Indian spices, a nod to the region's large immigrant community. The dessert course skips sweet entirely in favor of olives, basil, and artichoke. One half of the couple runs the room with warmth and a wine list she clearly knows cold; the other cooks.
