A converted 19th-century finca on a UNESCO biosphere reserve, set among hiking trails and wild pebble beaches, is a fairly confident opening move for a hotel group that started life as a cocktail bar in Paris. Rooms by designer Dorothée Meilichzon sit under timber ceilings with a contemporary ease, and the nine freestanding villas have the kind of space that makes the Paris outpost feel like a memory.
