    Maynard James Keenan, the Tool frontman, makes wine in Arizona, and Merkin Vineyards is where you can eat alongside it. The trattoria pairs Italian-leaning dishes with the estate's bottles, including the Chupacabra red blend, a grenache-mourvèdre-syrah that shifts slightly vintage to vintage, like its shapeshifting namesake. The 2023 took Phoenix New Times' top Arizona red. It's the kind of place that makes the whole "rock star winemaker" premise feel less gimmicky than it sounds.
