A 19th-century castle that once belonged to a Bordeaux wine house, now a Philippe Starck-designed boutique hotel in the Chartrons neighborhood. Starck plays it unusually restrained here, all warm mirrors and layered textures rather than his usual provocations. The spa runs to a hammam, indoor pool, and four treatment rooms, and the restaurant is Masaharu Morimoto's first European outpost, pairing Japanese technique with local ingredients and a serious sake list.
