Ants crawl across the walls here, a deliberate metaphor for the team's work ethic, which feels like exactly the kind of thing a Michelin-starred tasting menu restaurant opposite a Templar castle would do. The single menu fuses Japanese technique with the Bierzo region's own ingredients, so ramen and yakitori arrive carrying very local produce. The chef cared enough about the star to have it tattooed on his wrist, which tells you something about the temperature in the kitchen.
