An old stone mill still stands on the grounds, lending this hillside hotel its name and its unhurried mood. Designed by Orma Architettura and Dorothée Meilichzon, the rooms use earth-formed concrete, natural wood, and textured fabrics, with views split between the sea and the village below. Cargèse itself sits where Greek and Corsican cultures quietly overlap, which is either a history lesson or just a good excuse to linger over lunch.
