    The kitchen is next door to an organic garden that actually stocks it, which sets the tone for this family-run Spanish restaurant in a quiet village just north of Valencia. The chef leans hard into whatever the season hands him, so the menu shifts constantly and plenty of dishes never appear on the printed card at all. Rice dishes are cooked to order. The Michelin Guide awarded it a Bib Gourmand, which tracks.
