The name means something like "the space my heart occupies," drawn from an old belief that the human heart spans about nine square centimetres, which is either very poetic or very small depending on your mood. This is a Japanese restaurant built inside the chef's childhood home, and the cooking centers on dashi, the kind where the broth in a soup dish quietly does all the arguing. A place for people who notice when something is exactly right.
