Every seat in this Kyoto cocktail bar is reserved, and once you're in, the menu is decided for you: five experimental cocktails, each with a paired snack, under the house philosophy of "liquid cuisine." The format alone tells you what you're signing up for. It's one of two bars from the same bartender, and the more serious of the pair, so arrive with an open mind and no strong opinions about what you're about to drink.
