    The stone walls and vaulted ceilings have been around forever, first as a monastery, then an inn, and now a contemporary regional restaurant in the small town of Borgonovo Val Tidone. The kitchen leans into Emilia-Romagna's pantry but updates it with enough modern technique to keep things interesting. A handful of guestrooms next door means dinner doesn't have to end with a drive.
