There is no printed menu at Nuum, a tasting-experience restaurant in Cumbayá where the Spanish chef personally circles the room each night to explain what he's made and why. Seven or so courses lean heavily on fish and seafood, with ceviche and oyster preparations drawing particular attention. The whole thing runs on a kind of controlled improvisation that could feel precarious but lands closer to theater, in a good-natured way.
