  1. A dining counter in a small Frisian village is not where you'd expect a kitchen this focused, but here we are. Oan Tafel runs a surprise menu that changes with local produce, the chef pulling about 80% of ingredients from within the Netherlands and nudging them with Asian-inflected marinades and sharp, citrusy notes. Suites are available if the drive home feels like an afterthought. The Michelin Guide lists it among its selected restaurants.
