Carved out of a medieval monastery on the Ave River, Oculto was literally dug from beneath it, which is how a vaulted brick ceiling becomes both decor and origin story. It's a tasting-menu restaurant, two menus deep in the marine and seasonal world, with aperitifs and petit fours taken in a lounge facing the kitchen. The team holds a Michelin star. Dress accordingly, and maybe skip lunch.
