A family-run kappo in the old Saga neighborhood, where the fish arrives steamed, grilled, or however you care to have it, and the eel comes out twice, plain and soy-glazed, so you can taste the difference yourself. Lunch leans into local tofu, sourced from just up the road. The welcome is the kind you only get when both generations of a family are working the room. It holds a Michelin star.
