    A small Mediterranean restaurant on a pedestrianized street in Gandia's old town, where the menu changes daily and the kitchen decides what you're eating based on the market. The two-person team runs tasting menus built around fish and vegetables, so there's no à la carte safety net, just whatever looked good that morning. The cooking skews creative while staying rooted in the region, which is more discipline than it sounds.
