A restored seaweed shed on Texel's eastern edge now houses some of the rooms at this adults-only boutique hotel, a converted farmhouse a short walk from the Wadden Sea. Twelve rooms split between garden suites, farm suites, and the shed's Wier Lodges, with copper fittings, stone basins, and Texel wool duvets throughout. The restaurant runs a single surprise menu that follows the island's seasons, which is either exciting or anxiety-inducing depending on your relationship with menus.
