A self-described Brummie of Bangladeshi heritage, Aktar Islam runs this two Michelin star contemporary Indian tasting menu restaurant in Birmingham city centre more like a modern European kitchen than anything you'd expect. The space is strikingly spare, the cooking is deeply researched, and a single potato dish can involve three separate cooking methods before it reaches the table. The set lunch keeps it from feeling like a special-occasion-only proposition.
