Tucked into a residential pocket north of Palma, Óseo is a modern tasting-menu restaurant where the kitchen leans hard into Mediterranean-Mallorcan ingredients and lets the seasons do the arguing. Two menus, five or nine courses, and a chef who treats stuffed partridge with the same seriousness as smoked aubergine. The kind of place that feels personal rather than programmatic, which in a dining scene full of scenic terraces is a different kind of ambition.
