A former post office in a small Noord-Holland village, surrounded by fields of red and white cabbage, is not where you'd expect serious modern French cooking. Yet the chef, who came up at places like The Fat Duck, turns out elegant, deeply sauced plates with the kind of meticulous garnishing that suggests a very long mise en place. The room is cosy and the drive pastoral; the food is the contrast that makes the whole thing work.
