A 16th-century palace wedged between the Sierra del Sueve and the Atlantic coast, restored with enough care that the historic bones and the contemporary interiors don't seem to be fighting each other. Rooms pull their colors from the surrounding landscape, the spa is elaborate enough to qualify as a reason to stay, and there's a gastronomic restaurant, Tella, doing serious regional cooking. The Michelin Guide awarded it one Key.
