    The name comes from a type of sorrel that grows in cornfields, which tells you something about how seriously this Cantabrian farmhouse restaurant takes its patch of land. Rustic dining room, gastro-bar with high tables for tapas and raciones, a terrace, and cooking that follows the season hard: local fish, steak tartare, stews built around the prized regional Pedresa chicken. It holds a Michelin Bib Gourmand.
