A self-taught chef cooking in a medieval hilltop castle is either a recipe for pretension or a great story, and at Pavus it's the latter. This Michelin-starred fine dining restaurant sits inside Grad Tabor above Laško, where the tasting menu moves through Slovenia's larder, foraging, whole-animal cookery, and local wine, the Styrian whites in particular. In summer, the panoramic courtyard does most of the talking.
