Tucked into a nature reserve where the mountains meet the Cantabrian Sea, this Michelin-starred restaurant sits inside a boutique hotel that looks like it has been quietly ignoring the last few centuries. The cooking is modern but roots itself firmly in the local and seasonal, with two tasting menus to choose from, one named for sunrise and one for craving, which is a pretty good summary of the experience.
