A 29-room boutique hotel in a restored 19th-century building right on the IJssel River, where several rooms look directly onto the water. The Pillows brand does self-consciously well-appointed comfort at a human scale, and this outpost in underrated Deventer delivers the full version: proper beds, an informal restaurant and lounge, and the IJssel Restobar opening onto a terrace at the river's edge, which is the obvious place to be.
