Modern New American
An old cow barn in Northumberland, converted into a fine dining room where the sun sets through a large window over Hadrian's Wall and everything goes warm and golden. The tasting menu runs close to twenty courses, with the kitchen foraging the surrounding countryside and growing much of the rest on site. Fermentation and preservation do serious work here without the cooking feeling like a lecture. Pine holds a Michelin star.
