    The Wiener schnitzel has been a menu fixture long enough that taking it off would probably cause a local incident. This old-school Swiss tavern in Baden offers a choice between a snug, wood-panelled room and a more polished dining space, with a shaded rear terrace that fills up fast in summer. The kitchen leans into regional and seasonal cooking, and the front-of-house team is relaxed enough that nobody feels rushed.
