The terrace at this one-Michelin-star restaurant hangs above the valley outside Merano like a particularly smug hawk, and on a clear day the view threatens to upstage the food. Chef Egon Heiss runs a single tasting menu of creative Alpine cooking, built around the castle's kitchen garden and mountain producers nearby. Char, trout, wild game, and local lamb appear in near-permanent rotation, dressed up in ways that justify the drive through the woods to get here.
