A couple from Toulouse who traded their wine bar for the Atlantic coast runs this bright, Parisian-spirited bistro in Royan, where one half works the floor and pours from a list of over 200 natural and biodynamic wines while the other cooks the kind of generous, home-inflected food that makes you feel someone actually thought about you. It holds a Michelin Bib Gourmand, and the room earns it without trying very hard.
