A 17th-century moated castle outside Utrecht, reached by a small bridge and restored to the kind of grandeur that makes you straighten your posture at the car door. This is formal French fine dining, Michelin-starred, with a kitchen that leans on exceptional produce and sauces that do the heavy lifting. The wine list has some harder-to-find European bottles alongside Dutch selections, and the two were clearly introduced on purpose.
