    Set inside a UNESCO-listed Ottoman neighborhood in Cappadocia, this restaurant holds a Michelin star for cooking that reads like an archaeology project: nearly forgotten regional recipes, pulled from obscurity and given a quiet modern touch. The terrace looks out over the valley, the dining room is all traditional warmth, and the menu rotates with the seasons. Ingredient-led country cooking, taken seriously.
