Candles throwing shadows onto colorfully plated dishes is the move at Rubra, a modern restaurant inside the W hotel on Punta de Mita's Pacific coast. Daniela Soto-Innes leads the kitchen through a tropical menu that leans on banana flower, passionfruit, and galangal, which sounds like a resort menu until it doesn't. The indoor-outdoor room, all concrete and greenery, earns its keep after dark.
