A Pisco bar and restaurant inside a shopping mall in Santa Cruz, which sounds like a bad idea until you see what the kitchen is doing. The chef's path ran through Peru, Japan, and Trinidad before landing in Bolivia, and the menu reads accordingly: sushi and ceviche sharing space, mashed potato discs topped with crab tartare, smoked fish in tamarind. It landed on The 50 Discovery list, and it's easy to see why the room keeps people curious.
