Centuries-old beams and raw concrete share walls here, which tells you something about what Amandine Chaignot is up to in this sleepy Perche village. The restaurant, named for sage, leans hard into herbs, with sorrel, nettle, verbena, and rosemary threading through a plant-forward menu built on produce from neighboring farms. It operates as both a bistro and a fine dining room, so the village gets a local and you get something considerably more considered.
