A prix fixe restaurant in a mountain valley outside Nara, SÉN holds a Michelin star for what it calls "watershed cuisine," a meal built entirely around the Kumano River corridor: vegetables, fish, and game sourced from local farmers and hunters, everything cooked over firewood in quiet tribute to a region that ran on forestry. The stream outside is audible, which either means the setting is peaceful or the walls are thin; here it's the former.
