    The name stitches together the children's names of the couple who run it, which tells you something about the stakes here. This Michelin-starred modern restaurant in downtown Toulon took over a storied old seafood house and completely remade it. The chef, who came up through serious Paris and Chantilly kitchens, leans hard into vegetables and sustainable sourcing without ever sounding like he's lecturing you about it.
