  1. Smoke from the binchotan charcoal is the first thing you notice, before you've even sat down. This is a yakitori restaurant from Tokyo, and the kitchen is open in the middle of the room so the whole meal doubles as a floor show of skewers and coal. The team works through the whole bird, beak to tail, in far more configurations than seems reasonable for one animal. The chicken liver pâté with warm baguette is a genuine curveball worth ordering.
