The chef grew up here, left, and came back, which tells you something. Signum is a Michelin-starred restaurant on the Aeolian island of Salina, where the kitchen leans hard into the local, including the salt-forward intensity that lesser cooks would try to soften. Tasting menus run six to nine courses, the wine list pulls from some of the family's own production, and the setting, styled like a traditional Aeolian village, makes it easy to stay longer than planned.
