    Check the tide table before you book: Mersea Island cuts off at high water, and Stark is worth the timing. This Michelin-starred tasting menu restaurant seats just a handful of guests while the chef runs the kitchen alone, turning out a six-course menu built around exceptional local produce. The wine pairings are well-matched if you'd rather not agonize over the list. Intimate in the way that actually means intimate, not cozy-branding.
