It's the first outpost outside Japan from the team behind a three-Michelin-starred room in Sapporo, and the Macau iteration holds a Michelin star and a Forbes Five Star of its own. The room is calm and spare, the pacing unhurried, and the fish arrives at the kind of temperature that suggests someone cares deeply about that sort of thing.
