A cheese trolley stocked with over fifty Canary Island varieties sets the tone at this Michelin-starred tasting menu restaurant inside the Villa Cortés hotel. The chef, an Argentinian who has spent decades on the islands, builds each menu around the culinary heritage of the native Guanche people, with dry-aged fish doing a lot of the heavy lifting. A team that includes marine biologists and historians is either reassuring or slightly alarming, depending on how you feel about academic rigor at dinner.
