Four tables around a central fireplace, walls clad in reclaimed timber: this intimate gourmet tasting-menu room is tucked behind the livelier Kosmo Taste the Mountain, reachable by lift from the car park below. The chef, Apulian by birth but clearly seduced by the Alps, builds creative menus around mountain ingredients and a kitchen garden, and his vegetable dishes, a celeriac study or a plate called "100% carrot," have a way of outlasting everything else in memory.
