    The dining room was designed so the pink palette would flatter a lady's blush, which tells you everything about the register you're operating in. This is formal hotel fine dining at full tilt, all gilt mirrors and chandeliers, with two Michelin stars and a spot at number two on the National Restaurant Awards 2026 list. John Williams has cooked here for close to two decades, keeping the cooking classical French but lighter than it looks.
