The 83 rooms keep things warm and unfussy, with natural tones and the odd color punch, while three restaurants pull their own weight: open-fire grilling at Copper, Peruvian small plates and pisco on the roof at Inca, and a round-the-clock farm-to-table spot that spills onto a garden terrace.
