    A whitewashed pub on a windswept sea wall in Kent, where the chef makes his own salt by boiling seawater from the beach out back. The slip sole grilled in seaweed butter has become quietly famous, which the chef hates, because he doesn't believe in signature dishes. A Michelin-starred gastropub that somehow stays a proper pub, with locals nursing pints alongside pilgrims who've driven two hours for the tasting menu and pretend they haven't.
