    American

    Brady Williams built his name at Canlis, and Tomo is what happens when a fine-dining chef stops apologizing for also loving a steam burger. The à la carte menu lands somewhere between Japanese comfort food and upscale American, with kakigori towering improbably over its bowl for dessert. The room runs dark and stylish, and the wine list is adventurous enough that the four-glass, diner-paced flight exists as a sensible entry point.
