A courtyard tucked behind Pinerolo's porticoes leads to an early twentieth-century building where Christian Milone runs a Michelin-starred trattoria that takes its Piedmontese roots seriously. Two tasting menus divide the room: one revisits regional classics, the other lets single ingredients carry entire courses. Much of the produce comes from the kitchen garden out back, and a chef's table overlooking the pass is available for the committed.
