  1. Tres lives in a cellar, which sets the tone before you've touched a plate. It's an intimate counter-dining restaurant in Rotterdam where a self-taught chef works through ferments, garums, and long maturations with the focused calm of someone who finds this genuinely relaxing. Ingredients come almost entirely from within 30 kilometres, and nothing goes to waste. The Michelin Guide has it selected, and the room rewards the kind of eater who leans forward when the explanation starts.
